Welcome to the Visayan Cuisine

Welcome to an exotic cuisine that is very different from what the western world is considering to be Asian food. Asian foods are in general spicy, but the Visayan/Filipino kitchen is very much influenced by 400 years colonisation by the Spaniards, so today Filipino foods are mild and gentle.
As Philippines consist of more than 7000 islands its natural that seafood is very common and its proximity to China have also influenced a lot, for example with noodles and spring rolls.
Visayan kitchen often use marinating in vinegar and citrus (calamansi).

Weight & Measures
I prefer that the standards of grams and ml to be used, but I am also aware that some recipes are hard to recalculate, especially the use of cup (225ml) as a weight measurement. A simple conversion table is
1 cup is 225 ml
1 oz is 28 ml of grams
